That Toinha is not just any Bahian, this is evident to those who see her, for the first time, behind her board. What many do not even suspect is that she is the one who makes the palm oil that she uses to prepare her delicacy. She climbs the coconut tree, drops the bunch, cooks the coconuts, macerates in the pestle, and when everything turns into a paste, she separates the liquid from the bagasse in a long manual process. The business takes a lot of work, but who cares? - “My acarajé has to be perfect” - she says proudly.

Director's Biography
Sérgio Bloch is a director and producer, having made numerous films, documentaries and television series, including Burro-Sem-Rabo (1997), Tainá, Uma Aventura na Amazônia (2000), Olho da Rua (2001), Mini Cine Tupy ( 2002), Amazonia, histories of our history (2006), Sobre Rodas Brasil (2007), Viver para Contar (2011) and the TV series Sobre Rodas América Latina (2013). In 2015 he produced, scripted and directed Na Boca do Povo, a series broadcast by TV Brasil that seeks to establish connections between Brazilian popular culture and food. In 2017 he directed the series Instantes Cruzados, which aired on Canal Curta! in January 2018, and the second season of Na Boca do Povo, which will air on CineBrasil TV in 2021.
